This Week’s Lunch Box Filler


I remember as a kid I thought Ryvita looked and smelled like cardboard and I wouldn’t try one.  Luckily my kids are more adventurous and open-minded than I was, and they love them.  These days I love them too, especially the Multi-Grain ones, spread with extra light cream cheese and topped with salad.  They are my new bread.

They are also a great snack to pop into the lunch box.  I usually spread the cream cheese on at home and they don’t seem to go soggy, but you can keep the cream cheese separate if your kids don’t mind spreading it on with a carrot stick or something.  I am assuming here that none of you send knives to school, naturally.

If your kids aren’t into Ryvita, why don’t you try something like Premium Crackers?  Your topping choices are endless, anything from spreads to salads, whatever your kids prefer, and it can make a nice change from sandwiches.
