It’s time to spice up that boring Chicken and Salad sandwich by adding some Craisins, Greek Yoghurt and Mayonnaise. Â My kids love Craisins so when I saw this recipe I thought it was worth giving a go, and the school holidays were the perfect time to try out new recipes. Â I hate the thought of putting something new in their lunch boxes, having them hate it and go hungry until they get home from school, so I try most new recipes out on them on a weekend or in the holidays first. Â You can easily make the chicken and craisin filling in advance and keep it in the fridge until you want to whip up a quick lunch or pack their lunch boxes before school.
Greek Yoghurt Chicken Salad
2 Cups Cooked Chicken, chopped
1/4 Cup Diced Celery
1/4 Cup Dried Craisins
1/4 Cup Plain, Greek Yoghurt
1 Tbl Mayonnaise
1/4 tsp Salt
1/4 tsp Pepper
Salad fillings of your choice
Directions:
Combine all of the ingredients in a large bowl.
Chill in the fridge for at least 30 minutes to allow the flavours to combine.
Serve with salad in a wrap or sandwich, or serve on a salad with crackers.
