1/2 Cup Plain Flour
1/2 Cup Plain Wholemeal Flour
1/2 Cup Oat Bran
2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1 pinch salt
1 Cup Canned Pie Apples, chopped
1/2 Cup Apple Juice
1/2 Cup Apple Puree (Apple Sauce)
Preheat oven to 180C.
Combine first eight ingredients in a large mixing bowl.
Add remaining ingredients and mix until just combined.
Spoon mixture into prepared muffin tins/papers and bake for approx. 20-25 minutes. Â Muffins are done when they turn a light golden colour and a toothpick inserted into a muffin comes out clean.
I used an ice-cream scoop to measure the same amount of batter into each muffin paper, making 8 muffins at 20.7 grams of carbohydrates in each muffin. Â The total amount of carbohydrates in the recipe is 165.6 grams, so just divide this amount by the number of muffins you make and you will have the carb. count per muffin.
Remember, if you decide to add blueberries etc. your carb. count will alter also.

P.S. Â The girls were hunting for more of these muffins for breakfast this morning, and of course they make a great breakfast alternative, so I guess I will be making another batch after all.
