Rainbow Fritters
Ingredients:
2 Cups Wholemeal Self-Raising Flour (you could use white if you wanted to)
2 Cups Raw Veges (finely grated or diced)
2 Eggs, lightly beaten
1 1/2 Cups Tasty Cheese (you really want a cheese with flavour)
1/2 Onion, finely diced or grated
1 3/4 Cups Milk (you can add more if needed)
Salt and Pepper
50g Butter, melted
Method:
Place all ingredients in a large mixing bowl and mix to combine. Â The mixture should be like a thick pancake batter.
I always test the first one before cooking more to see if it is too doughy. Â If so, just add a little more milk.
Grease a hot fry pan and place 1/4 cups of mixture in the pan to make fritters.
When the sides of the fritters start to set, flip fritters to cook the other side as you would pancakes.
Fritters are cooked if they spring back when touched.
Cool and place in an airtight container in the refrigerator.
LunchBox Tips….
You can choose to use low fat milk and cheese in this recipe if you want to lighten it up a bit, but remember to season with salt and pepper for flavour.
You could also use something like Flora lite margarine in place of butter.
