Banana Chocolate Chip Cookies


Ingredients:

Chocolate Chip Banana Cookies1/3 Cup Butter, softened

1/2 Cup Sugar

1 Egg

1/2 Cup Mashed Ripe Banana (approx. 1 large banana)

1/2 tsp Vanilla Extract

1 Cup Plain Flour

1 tsp Baking Powder

1/4 tsp Salt

Diabetic_Friendly1/8 tsp Baking Soda

1 Cup Dark Chocolate Chips (the recipe called for semi-sweet chocolate chips)

Directions:

Preheat your oven to 180C.

In a small bowl, cream butter and sugar until light and fluffy.

Beat in the egg, banana and vanilla.

In another bowl, combine the flour, baking powder, salt and baking soda.

Gradually add the flour mixture to the butter mixture and mix well.

Stir in chocolate chips.

Drop by tablespoonfuls onto a lined or greased baking tray.  I left about 5cms between each biscuit to allow for spreading.

Bake for 9-11 minutes or until the edges are lightly browned.

Remove to wire racks to cool.

Notes:  The original recipe claims you will get 36 cookies out of this mixture, but I only got 36 cookies out of a double batch, making each of my cookies worth 18 grams of carbohydrates, not 9 grams.

The original recipe called for the use of semi-sweet chocolate chips, but I substituted dark chocolate chips.  I did some investigating, and a 15g serve (that’s 1 tablespoon) of semi-sweet chocolate chips contains 10.5g of carbohydrates and a 15g serve of dark chocolate chips contains 9g of carbohydrates which is pretty close, so I have included the carbohydrates for the original recipe.
