Spontaneous Holiday Lunches


I love the September school holidays, the weather is warming up, the flowers are blooming and the carnival is on, and every morning can be a lazy morning.  We love lazy mornings!  We love lazy lunches too, but we can’t just eat sandwiches every day.  I need to try and sneak some extra nutrition into these kids without their knowing it (especially the boys), and this little concoction I came up with sneaks in the veges, wholemeal flour and some dairy without them catching on.  That is, unless their twin sister tells them they are full of broccoli.  Thanks sweetie.   You can use up any veges. you have on hand.  I used grated carrot and broccoli (I shaved the heads off with a knife). I also used two small spring onions I needed to use up instead of the onion.  Some of my kids chose to spread lite cream cheese on these fritters, and the others dipped them in tomato sauce.  They can be eaten warm or cold, so they’ll be great for the lunch boxes next term.  You could add some ham or left-over chicken if you wanted to make a meal of them.  The best part is that they are a Dump Recipe.  Dump all of the ingredients in a bowl, mix, cook and eat.  Quick and delicious.

Rainbow Fritters

Ingredients:

2 Cups Wholemeal Self-Raising Flour (you could use white if you wanted to)

2 Cups Raw Veges (finely grated or diced)

2 Eggs, lightly beaten

1 1/2 Cups Tasty Cheese (you really want a cheese with flavour)

1/2 Onion, finely diced or grated

1 3/4 Cups Milk (you can add more if needed)

Salt and Pepper

50g Butter, melted

Method:

Place all ingredients in a large mixing bowl and mix to combine.  The mixture should be like a thick pancake batter.

I always test the first one before cooking more to see if it is too doughy.  If so, just add a little more milk.

Grease a hot fry pan and place 1/4 cups of mixture in the pan to make fritters.

When the sides of the fritters start to set, flip fritters to cook the other side as you would pancakes.

Fritters are cooked if they spring back when touched.

Cool and place in an airtight container in the refrigerator.

LunchBox Tips….

You can choose to use low fat milk and cheese in this recipe if you want to lighten it up a bit, but remember to season with salt and pepper for flavour.

You could also use something like Flora lite margarine in place of butter.
