By the end of the first week of the school holidays, my kids were  starting to miss their school mates, and to save my sanity it was  in my best interests to arrange a class playdate in the park.  Now, with one child in year three and twins in prep I needed to call in re-enforcements to arrange something like this,  otherwise I would have spent a whole day sending text messages.  Luckily, the mums in our classes were more than willing to pitch in and call anyone they knew, and by the time we combined all of our phone lists we had the numbers of just about everyone.
The weather was beautiful, the park not too busy, and a good time was had by all. Â Conversations at these get-togethers cover just about every topic, but on this day we were recalling our favourite baked goodies when we were kids, and the recipe I came away with that day was contributed by …… A DAD! Â Yes, dads do come to playdates! Â Wes’ favourite childhood treat was Cornflake Cookies, which I have had before, but his mum added Chocolate Chips, and that, apparently, makes all the difference. Â Well, I needed to put this theory to the test immediately, and I am happy to report that yes, Chocolate Chips do indeed make all the difference. Â Yuuuuummmmmmm!!!!!!!!!!!!!!!!!!! Â So, here is the recipe my family demolished in record time:
Ingredients:
125g butter, chopped, at room temperature
½ cup caster sugar
1 egg
½ teaspoon vanilla extract
1 cup self-raising flour, sifted
2 cups cornflakes
½ cup sultanas
¼ milk choc chips
Method:
- Preheat oven to moderate, 180°C. Lightly grease and line 2 large oven trays.
- In a bowl, cream butter and sugar together until light and fluffy. Beat in egg and vanilla.
- Fold flour, 1 cup cornflakes, sultanas and choc chips through mixture.
- Roll tablespoonfuls of mixture into balls and roll into remaining lightly crushed cornflakes. Arrange on trays about 4cm apart.
- Bake for 15-20 minutes until golden. Cool on tray for 5 minutes. Transfer to a wire rack to cool completely.
