This is what I call a Pantry Recipe. Â No fancy ingredients, just pantry staples, eggs and milk. Â But boy are they yummy! Â And quick to prepare. Â I whipped mine up in about 5 minutes, and popped them into the oven just before the kids got home from school this afternoon. Â Sometimes the simple things are the best.
Brown Sugar Cinnamon Muffins
Ingredients
1 3/4 Cups Plain Flour
1/3 C Â White Sugar (I used Raw and it was fine)
2 tsp. Baking Powder
1/4 tsp. Salt
1 Egg
3/4 Cup Milk
1/4 C Oil
A little brown sugar and cinnamon
Method:
Mix together flour, white sugar, baking powder, and salt. Add egg, milk and oil. Mix together.
Fill muffin cups 1/4 full with batter.
Add a pinch of brown sugar.
Cover the brown sugar with batter.
Sprinkle brown sugar and cinnamon on top.
Bake for 15 minutes at 180C.
