Every school holidays I seem to live in the kitchen. Â I love cooking, but by the time the kids go back to school I feel like I have spent the whole holiday in the kitchen trying to think of something to feed them. Â It’s amazing though, take your everyday ingredients, present it a little differently, and they seem to get excited. Â Like this easy smorgasboard I threw together last Saturday when the weather was bleak, the kids were fighting and I needed to get out the door in a hurry. Â It’s nothing special really, some cheese, crackers and fruit, Â but I put it on a pink tray, added some serviettes and a new yoghurt and apple dip and they thought they were having a party. And the dip was a real hit, even the Jatz crackers were being dipped in. It would be easy to re-create the same thing for their lunch boxes.
Apple and Yoghurt Dip
1/2 Cup Natural Yoghurt (you could use Vanilla)
2 Tbl. Apple Puree (or a tin of baby apples if you have it)
Method:
Basically, you just mix the yoghurt and apples together and serve with fruit to dip.
The recipe is easily halved if you don’t have six kids to feed.
