Everyone needs a recipe like this one for those days that just don’t go to plan. Â If you are looking for something extra to put in your lunch boxes, chances are you have everything you need to make these quick and tasty muffins. Â I used Strawberry yoghurt this week, but you could use any flavour you like. Â This afternoon I think I am going to try Vanilla and throw in the choc-chips I have left over from my chocolate muesli bars.
Yoghurt Muffins
Ingredients:
1 x 100g tub of Yoghurt (flavour of your choice)
100g White or Raw Sugar
100g Self-Raising Flour
100ml Olive Oil
2 Eggs
Berries or Dried Fruit (optional)
Method:
Combine all ingredients in a mixing bowl and stir to combine.
Spoon into greased muffin tins or muffin papers and bake at 180C for 30 minutes, or until muffins turn a light golden colour and bounce back when touched lightly.
LunchBox Tips….
I made kid-sized muffins in patty papers which reduced the cooking time to approx. 20 minutes.
