This Week’s Lunch Box Fillers

These two lunch box fillers make a regular appearance in my daughter’s lunch boxes, so it is a good thing they are both Diabetic Friendly Snacks.  I have included two this week just in case some of you go to a school with a NO NUTS POLICY.  Our school allows nuts from year 1 up, with only our Prep excluding them.

Boiled eggs are no longer considered bad for your cholesterol and are a great source of protein and iron if you are looking for a vegetarian snack.  Eggs are carbohydrate free placing them on the free foods list for diabetics.

Nuts are not completely carbohydrate free, but if you choose nuts like pecans, almonds and walnuts, their carbohydrate count is quite low unlike cashews.  Sometimes I throw in a few cranberries or dried apricots, but don’t forget to calculate the extra carbs. if you do this.-
