What’s In The Box?


This week was a whirlwind of events.  Tuesday we let our eight year old skip school to attend a Diabetic Education Seminar which was being held locally.  It was a great day, a bit of a refresher course and full of inspiration, especially from their star attraction and special guest Rob Palmer from Better Homes and Gardens.  Now do you see why my daughter was so excited to attend? (along with three of the four other Type 1 Diabetics from her school)  Rob was diagnosed with Type 1 when he was seven years old and shared his story with everyone along with his positive attitude and endless energy.  He was so great and natural with the kids, getting down on their level to speak with each of them individually, have their photo taken together and sign autographs.  I remember the night he won Dancing with the Stars.  We don’t always watch every episode, but this season we had to tape each of his dances if he danced after the kids went to bed.  Our little Type 1’er was so excited when he won.

So that was the start of the week, and to make up for the other kids not coming with us we let them have tuckshop.  You see, it really was a Cheating Tuesday!  Later in the week I went on an excursion to the local spring festival with my twins in Prep. and baked for our Type 1’ers end of term break-up party.  All in all, a busy last week of term.

In the lunch boxes I did pack this week we loved our Quiche Muffins (yes, even the Vegemite Kid ate them), our Be Natural Trail Bars, Berry flavour (although I wasn’t fussed on their sweetness), Berry Muffins (recipe to come soon when I have it just the way I want it) and the usual yoghurt, cheese and crackers, strawberries, bananas and apples.  I think I snuck in some corn chips and salsa along the way.  Oh, and I baked Double Chocolate Brownies for the break-up party.  Next week it’s school holidays, but the kids still need to eat don’t they, so we’ll be back, maybe trying a few new recipes that the kids can help with and tips to always be ready for those holiday snack attacks.
