First of all, I have to say I was a little hesitant when I made this recipe. Should I or shouldn’t I add the apple? I have always thought it was a bit weird when people added things like apple or raisins to salads, but when I try them, I usually like them, and my kids love apples, so I gave it a go. I’m glad I did because we all loved it.
Secondly, it’s just a little cheaty. If you don’t have time to shred your own chicken breasts, buy a BBQ chicken like I did today. This made it super-quick to prepare. You can toast this sandwich if you like, and that’s the way I like it, on toasted turkish bread with all of the cheese melted, but my little Fruit Bats  liked it just as well on sandwiches for school. It also keeps well in the fridge without the apple going brown.
Chicken Salad Sandwiches
BBQ Chicken (I used the breast meat, diced)
1/2 Cup lite Mayonnaise
1 Tbl. Lemon Juice
1 1/2 Cups Grated Cheese (I used low-fat)
1/2 Cup diced Celery
1/2 Cup grated Carrot
1 Apple, finely diced
Bread or roll of choice.
Method:
Place all ingredients in a medium sized mixing bowl and stir to combine.
Use filling as desired (toasted, on rolls, crackers etc.)
To make this recipe what I consider, as the parent of a Type 1 Diabetic, to be  Diabetic Friendly, make sure you use lite Mayo. and Cheese and maybe reduce the cheese  to 1 Cup instead of 1 1/2 Cups.  Also, choose a wholemeal or grain bread or cracker. This recipe goes a long way so as long as you don’t over-indulge with the amount of your filling it is a healthy sandwich for a diabetic.
