Honey Loaf


Like me, I’m sure you have a few favourite haunts on the web.  Blogs where you know you are sure to find a recipe quickly when you are in a pinch.  This happened to me Thursday afternoon.  I needed something extra to throw in Friday’s lunch boxes, but it needed to be something I could whip up quickly while I prepared dinner.  So, I decided to head over to see what Melissa had to offer at frillsinthehills.com, and I came across this recipe for Honey Loaf.  The kids loved it and so did I (served warm, slathered in butter I must confess, with a hot cup of tea).  It disappeared from their lunch boxes and I’m going to make another one this week to share with my mum and my sister when they come over for coffee.

Ingredients:

300g Plain Flour

2 tsp. Baking Powder

1/2 tsp. Salt

100g Butter, softened

175g Runny Honey

2 Eggs, beaten

75ml Milk

1 Tbs. Warm Honey, for brushing

Method:

Preheat oven to 170 degrees.

Cream the butter until light and fluffy, then add the honey and beat until well combined.

Add eggs one at a time and mix well.

Stir in flour, baking powder and salt and stir to combine (with a spatula or wooden spoon, not your mixer).

Stir the milk in gradually to form a soft, sloppy dough.

Spoon into a greased loaf pan (I used a round cake tin and lined it with baking paper) and bake for 45-55 minutes until lightly golden on top.

Heat your honey in a microwave safe cup for 20-30 seconds until hot, then brush over your loaf.

Be sure to enjoy a slice while you pack lunch boxes.
