Chilli Chicken Salad Rolls


Some of you may think this recipe is a little daring for your younger children, but my kids were raised on garlic and chilli so they love this recipe.  After all, it uses sweet chilli sauce which isn’t very hot.  We make this often, and everyone who visits seems to love it.  How much garlic you use is up to you.

Bek’s Chilli Chicken

Ingredients:

Chicken Breasts (how many you use depends on how many people you are feeding)

Sweet  Chilli Sauce (enough to cover chicken breasts)

Garlic (how much is a personal preference)

Mixed herbs (a light sprinkling)

Method:

Place chicken breasts on a non-stick baking tray. Do not use baking paper or it will stick to the chicken and believe me you will not be able to remove it.

Cover the top of the chicken breasts in sweet chilli sauce, sprinkle with garlic and mixed herbs and place in the oven at 180C and bake until juices of the chicken run clear.

Slice chicken breasts on the diagonal and use in salads or on rolls, wraps etc.
