Yesterday was an unusually peaceful Sunday afternoon. I was inside getting everything ready for school the next day, and the kids were outside pretending to make a campfire to cook their seed-pod soup over. I love the thought of them having a Dennis the Menace childhood. A bit of mud, a few innocently broken rules like playing with water during winter and using mum’s bedsheets to make a tent. Shared secrets behind the house where mum and dad can’t hear them (unless we are listening from our bathroom window).
This made me nostalgic for my own childhood, and made me want to bake, which was just as well because over the weekend they  devoured every cookie, vegemite scroll and muesli bar in the house. So, I decided on a muffin recipe I have been taking to playgroups and packing in lunch boxes for over 10 years. How old do I feel? I baked them kid-size in patty papers, but they look great baked in large muffin tins.  Best of all they are a never-fail recipe.
Choc-Banana Muffins
2 Cups Self-Raising Flour
1/2 Cup Caster Sugar
1/2 Cup Choc-Chips
1/2 tsp. Salt
100g. Butter, melted
1 Cup Milk
1 Egg
1 tsp. Vanilla
1 Cup Mashed Banana
METHOD:
1. Place flour, sugar, choc-chips and salt in a bowl.
2. In another bowl, combine butter, egg, milk and vanilla. Add to dry ingredients.
3. Add Mashed Banana and mix until just combined.
4. Place 1/4 cup mixture in each Muffin tin.
5. Bake 180c. 12-15 mins. until Muffins spring back when touched.
