Banana, Apple, Carrot, Oat Bran Muffins


I promised healthy recipes this week, and here’s a great, nutritious muffin to get you going in the morning, or at school.  It’s packed full of fruit and oat bran, and stays super-moist, especially if you accidentally double the apple and carrot needed because you are trying to do too many things at once.  So you can see lots of carrot in this photo which wouldn’t normally be that obvious.  If  your kids won’t eat the carrot if they can see it, use a super-fine, hand-held grater, the kind you would use to finely grate chocolate or parmesan cheese.  But don’t let that stop you trying them, even the batter smelt so good I was tempted to taste it,  but I didn’t (raw eggs YUCK!)  The Vegemite Kid didn’t have one, instead he went for the Choc-Banana Muffins I have stashed in the freezer, no surprise there! But the girls loved them and chose them for their lunch boxes today, so I think that makes them Kid-friendly.

Banana, Apple, Carrot, Oat Bran Muffins

Ingredients:

1 Cup Plain Flour

1 Cup Oat Bran

1 tsp Baking Powder

1 1/2 tsp Baking Soda

1/4 Cup Brown Sugar

1/4 Cup White Sugar

1/3 Cup Oil (you can use Vegetable if you like, but I used Olive)

1 tsp Vanilla

2 Eggs

1/2 Cup Milk or 1/2 Cup Soy Milk

1/2 Cup Grated Carrot

1/2 Cup Grated Apple

2 Mashed Bananas

Directions:

Mix the first four dry ingredients together in a small bowl.

Beat together oil, sugars, eggs, milk, and vanilla in a large bowl.

Add the dry mixture to the wet mixture until well combined.

Add carrot, apple and bananas to the mixture.

Bake at 180C for 18 minutes or until a skewer comes out clean when inserted, and the muffins are golden on top.
