I came across this recipe the other day, just before the kids were due home from school. Â It’s so quick and easy to prepare that it was baked and cooling before they walked in the door. Â Watch out though, my husband says it’s addictive, and I believe him because it’s all gone and the kids keep asking me to bake another one. Â It makes a large pan too, so you don’t need to double the recipe to feed a crowd or have some left over for the next day.
Ingredients:
1/3 Cup Golden Syrup
3/4 Cup Brown Sugar
2 tsp. Vanilla Essence
1 1/2 Cups Sultanas
3/4 Cup Natural Yoghurt
3 3/4 Cups Plain Flour
3 1/2 tsp. Baking Powder
Method:
Combine butter, golden syrup, vanilla essence and sultanas in a large saucepan over a medium heat until the butter has melted and the sugar has completely dissolved. Â The mixture should be completely smooth.
Add yoghurt, then flour and baking powder. Â Mix to combine.
Place in a baking tray lined with baking paper and bake for 20 minutes at 180C, or until slice turns a light golden colour.
I found it was best to cool the slice before cutting.
