Russian Slice


I came across this recipe the other day, just before the kids were due home from school.  It’s so quick and easy to prepare that it was baked and cooling before they walked in the door.  Watch out though, my husband says it’s addictive, and I believe him because it’s all gone and the kids keep asking me to bake another one.  It makes a large pan too, so you don’t need to double the recipe to feed a crowd or have some left over for the next day.

Ingredients:

300g Butter

1/3 Cup Golden Syrup

3/4 Cup Brown Sugar

2 tsp. Vanilla Essence

1 1/2 Cups Sultanas

3/4 Cup Natural Yoghurt

3 3/4 Cups Plain Flour

3 1/2 tsp. Baking Powder

 

Method:

Combine butter, golden syrup, vanilla essence and sultanas in a large saucepan over a medium heat until the butter has melted and the sugar has completely dissolved.  The mixture should be completely smooth.

Add yoghurt, then flour and baking powder.  Mix to combine.

Place in a baking tray lined with baking paper and bake for 20 minutes at 180C, or until slice turns a light golden colour.

I found it was best to cool the slice before cutting.
