My kids love taking cold pizza to school.  We don’t do it very often, and most times I will make my own pizza bases, but sometimes it’s a last minute thing and I just don’t have the time to make pizza from scratch.  That’s when I cheat and use English Muffins for my pizza bases.  I don’t toast the under-side of the muffin, I just split the muffin in two, spread tomato paste over each half, maybe sprinkle on some mixed herbs, then add whatever toppings the kids want before toasting them under the grill until the cheese melts and starts to turn golden. Just make sure you cool the pizzas completely before wrapping in glad wrap, and make sure you include an ice-pack in your lunch box to keep them cool and avoid bacteria.
Tips for keeping these pizzas Diabetic Friendly: Â Use wholemeal muffins, ensure your tomato paste has no added salt, use lite ham and cheese or skinless bbq chicken. Â Avoid toppings with a high fat or salt content.
