Pizza Scrolls

Pizza Scrolls are another great alternative to the boring sandwich, and jazz up the lunch box that little bit more.  You can use any of your favourite pizza toppings, just don’t go overboard.  Remember, you have to be able to roll them up and you don’t want all of the filling falling out when you slice through them.  I use my favourite pizza dough recipe, but your favourite should work too.

All you have to do is roll your dough out into a large rectangle.  Spread tomato paste or pizza sauce all over the dough and top sparingly with your favourite toppings.  We like to use tomato paste and top it with crushed garlic, dried mixed herbs, ham, pineapple (well drained, crushed pineapple works best), and mozzarella cheese.

Then you roll your dough up from the long side to form a long log shape.  Then you slice through your roll approx. every 10cms.

Grease a baking tray and stand each slice cup side up in your tray.  Place in a preheated oven at 180C  until the cheese has melted and your pizza dough looks cooked and is starting to turn a lovely golden colour.

Cool a little before serving as the filling will be piping hot.  These scrolls are just as yummy served cold in lunch boxes as they are hot and make a nice surprise for your little munchkins at lunch time.
