This Week’s Lunch Box Filler


There are no exact measurements for this recipe, you just toss together the three ingredients in the quantities that suit you, with carrot being the main ingredient.  My little diabetic loves it with crackers, and I often serve it as a side dish when we have a BBQ.

Coconut and Sultana Carrot Toss

Ingredients:

Carrots, grated

Sultanas

Dessicated Coconut

Directions:

Combine the three ingredients in a small salad bowl and toss until well combined.

Serve with crackers or as a side salad.
