School holidays + Rain + Wind +Coughing Sick Kids = PYJAMA DAY!
What do your Pyjama Days look like? Â Ours are filled with sleep-ins (echoes of laughter), pyjamas all day, quick and easy meals, fingernail painting, playing hairdressers, and cozying-up under the doona in front of a movie with popcorn and some home baking. Â And today, home baking means Honey Jumbles!
Honey Jumbles are so easy, I think even my nine year old could make them herself, with supervision of the oven of course, but there are a few opportunities for the kids to lend a hand.  The part they love most, apart from the icing is the rolling out of the dough into a log and slicing it.  You do have to rest the dough in the fridge for an hour, but it takes minutes to whip-up, then you can put your feet up and watch a movie with the kids.  Then you just roll it into logs, slice them into 10cm lengths and bake them.  Let them cool while you prep dinner, then ice them and you’re done. Unfortunately, today my kids will have to watch a movie and wait for their baked treats.  I don’t think I need them spreading any more germs in my kitchen.
And who says Honey Jumbles have to be pink or white? Â In our house they can be any colour of the rainbow you choose, and today we have gone for pink, white and blue, with added sprinkles on some just to jazz them up a bit.
Honey Jumbles
Ingredients:
2/3 Cup Golden Syrup (I know! Â Where’s the Honey?)
1 3/4 Cups Plain Flour
1 tsp Bicarb. Soda
1 tsp Ground Ginger
1 tsp Dry Allspice
1 Tbl Milk
Directions:
In a small saucepan, melt your butter and the golden syrup over medium heat.
Combine your dry ingredients in a large mixing bowl, then add your syrup and butter mixture, followed by the milk.
Mix to combine thoroughly, then refrigerate for one hour.
After one hour, pre-heat your oven to 190C, then turn out your dough onto a lightly floured board and knead lightly.
Roll your dough into two long logs, about 10cm in diameter, and slice into smaller logs approx. 10cm in length.
Place your logs onto a greased baking tray and bake for 10-15 minutes until they turn a light  golden colour.
Just in case you are wondering, you don’t need the flatten your logs at all, they will take on that perfect honey jumble shape themselves during baking.
Cool on trays while you prepare your icing.
Some people go for a royal icing for that lovely glossy look, but I don’t fancy feeding raw egg whites to my kids, so I just mix some icing sugar with a little milk until I get a thick, but slightly runny texture. Â Just runny enough to spread easily over the jumbles, but not completely run off the edges. Â You can try dipping if you like, but your icing will need to be a bit thinner, and it gets messy. Â Add food colouring of your choice, ice your jumbles, sit down with the kids and enjoy!
Dig in, they won’t last long!
