EVERYTHING FREE MUFFINS!
Now, I feel I have to be upfront and honest here, and tell you that these muffins didn’t exactly tickle my tastebuds, but I made a double-batch (16) of them about three hours ago and most of them have already disappeared with my girls requesting them in their lunch boxes tomorrow. Â In fact, they all had one for dessert tonight. Â Personally I found them a little on the bland side, and might even add a dash of vanilla should I make them again, but that said, they are egg-free, dairy-free and fat-free, containing no butter or oils. Â Once again, apple sauce, or apple puree as we call it here in Australia, is the magic ingredient, helped along by apple juice. Â When I read the list of ingredients I feared it may be lacking and turn out like rubber, but the texture was actually quite good, and as I said, the kids love them. Â So, if you have a child with allergies or an intolerance, this recipe may just be for you. Â I’m thinking next time I will toss in some blueberries, but if you’d like to change it up a bit, you could use pears or any other fruit of your choice, just make sure you still use the apple juice and puree to bind it all together.
Oat Bran Apple Pie Muffins (Everything-Free!)
Ingredients:
1/2 Cup Plain Flour
1/2 Cup Plain Wholemeal Flour
1/2 Cup Oat Bran
2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1 pinch salt
1 Cup Canned Pie Apples, chopped
1/2 Cup Apple Juice
1/2 Cup Apple Puree (Apple Sauce)
Directions:
Preheat oven to 180C.
Combine first eight ingredients in a large mixing bowl.
Add remaining ingredients and mix until just combined.
Spoon mixture into prepared muffin tins/papers and bake for approx. 20-25 minutes. Â Muffins are done when they turn a light golden colour and a toothpick inserted into a muffin comes out clean.
I used an ice-cream scoop to measure the same amount of batter into each muffin paper, making 8 muffins at 20.7 grams of carbohydrates in each muffin. Â The total amount of carbohydrates in the recipe is 165.6 grams, so just divide this amount by the number of muffins you make and you will have the carb. count per muffin.
Remember, if you decide to add blueberries etc. your carb. count will alter also.
Hope your kids like them as much as mine do.
P.S. Â The girls were hunting for more of these muffins for breakfast this morning, and of course they make a great breakfast alternative, so I guess I will be making another batch after all.
