All Wrapped Up


Now, I have shared my family’s favourite chicken wrap recipe, Chilli Chicken, but I thought you might like to know some of the other easy chicken marinades that we use.  I’m going to share links to these recipes on my family recipes site, Plate4Eight.com, otherwise this post could go on forever.  Of course, we don’t go to the trouble of marinading chicken for just one or two wraps, we might use the chicken for a meal the night before, or for a couple of lunches that week.  You can even freeze some for later use if you like.  That way it is cooked and ready to go, giving you a few more options on those days when you just don’t know what to pack.

Our latest discovery is Pollo Asado, a light, citrusy (is that even a word?) recipe.  Sounds fancy doesn’t it, but I can assure you it is as simple as chips, and because the flavour is great yet not overpowering,  the kids loved it.

I have been making April’s Chicken Marinade for about 10 years now,  my husband and sons take it on their yearly Space Pilot’s Camp.  You can use it for bbq’s, stir-fries, and of course, lunches.  Just make sure you use a low-sodium Soy Sauce or it might be a bit too salty.  It’s also a great freezer-friendly recipe if you are looking for some meals to stash in your freezer to feed your family on those crazy nights.

Honey-Soy Glazed Chicken is another favourite, it uses only 2 ingredients, and is really best used for chicken drumsticks because then the kids get to revel in it’s glorious stickiness, but for sandwich and wrap purposes I prefer to use chicken breasts.

I have more, but if I share them all at once, I could be here all day, so these are the ones we use most often because I know the kids love them, and they won’t come back in their lunch boxes at the end of the day.  So, I will leave you with these, I hope you like them.

And don’t forget that all-important ice-pack to keep your chicken cold until lunch time.
