Apricot and Sultana Rock Cakes


Only six more sleeps until school goes back,  as my kids would say.  Parents everywhere are racing around buying bags, books, pencils, shoes and yes, lunch boxes.  And after all the to-do is over we are left the night before school starts  wondering what we are going to pack in these boxes that will keep our kids healthy but happy.  This week I am going to share a few of the things my kids will be finding in their lunch boxes during the first weeks of school.  With so many boxes to pack I need to plan ahead.  Here is one snack we have enjoyed a couple of times over the school holidays that the kids have requested.

Don’t let the name put you off trying these little gems.  They may slightly resemble a small rock, but they’re not at all rock-like in consistency.  They are actually quite light and my toddler found them very easy to eat.  A great find for the lunch box, and very versatile.  You don’t have to use apricots and sultanas, use whatever dried fruit you have on-hand, or if you are feeling naughty, some choc-chips.

Makes 18

Ingredients:

1 Cup Wholemeal Self-Raising Flour

1 Cup Plain Self-Raising Flour

1/4 tsp. Cinnamon

1/3 Cup Sugar

90g Butter

1/2 Cup Dried Apricots, diced

1/2 Cup Sultanas

1 Egg

3/4 Cup Milk

Method:

Preheat oven to 200°C/180°C fan-forced.

Sift flours and cinnamon in a bowl. Stir in sugar.

Line 2 baking trays with baking paper.

Using your fingertips, rub butter into flour mixture until mixture resembles breadcrumbs.

Stir in apricots and sultanas.

Make a well in centre.

Combine egg and milk in a jug.

Add egg mixture to flour. Using a flat-bladed knife, mix to form a soft dough, adding more milk if required.

Spoon rounded tablespoons of mixture, 5cm apart, onto prepared trays.

Bake for 15 to 20 minutes or until golden. Stand for 5 minutes.

Transfer to a wire rack to cool completely. Store in snap-lock bags.
