Apple Nut Carrot Muffins


2 Cups Self-Raising Flour

1 Cup Sugar

2 tsp. Bicarb. Soda

2 tsp. Cinnamon

1/2 tsp. salt

1 Cup Oil

2 Cups Grated Carrots

1 Large Apple, Grated

1/2 Cup Walnuts, Chopped

2 tsp. Vanilla

1/2 Cup Sultanas

3 Eggs


Combine dry ingredients in a large mixing bowl.

Add remaining ingredients and mix until combined.

Don’t over-mix as your muffins will be tough and chewy.

Fill  lightly greased muffin tins/muffin papers 2/3 full with mixture.

Bake at 180C for 20-25 minutes or until muffins are lightly golden.
