1 Orange, quartered and seeds removed (leave peel on)
1/2 Cup Orange Juice
1 large Egg
1/2 Cup Butter or Margarine
1 3/4 CupsÂ Self-Raising Flour
3/4 Cup White Sugar
1 tsp. Baking Powder
1 tsp. Baking Soda
Preheat oven toÂ 180C, spray a muffin tin (12) with non-stick cooking sprayÂ or line withÂ muffin papersÂ and set aside.
Put orange quarters in food processor (or blender) along with orange juice and process or blend until pureed.
Add egg and butter to food processor and combine; pour into large bowl.
Combine dry ingredients together in a separate bowl, then add all at once to orange mixture.
Stir to combine.
Fill muffin cups about 3/4 full.
Bake in preheated oven for 20 minutes; remove from oven and let stand in tin for 5 minutes before removing muffins.
When doubling the recipe, I only use the peel of one orange.Â Â Â Try adding Poppyseeds.
For a special treat on a Sunday afternoon I ice with orange icing and sprinkle with coconut .
Remember coconut is a choking hazard for very young children.
