SMARTIES Cookies


I spent yesterday making sure I had dinner cooked, uniforms ironed and everything ready for today before the kids got home from school so I could sit down with them one by one and go through this week’s homework sheet, reader and spelling list. 

To my surprise they were really enthusiastic and completed their week’s homework sheet in one night.  That sure takes some of the pressure off the rest of the week.  Maybe it was the individual attention they enjoyed.  Anyway, they deserved a treat, so we made SMARTIES cookies for today’s lunch box.  Many SMARTIES went missing during this activity, never to be seen again, but we all had fun.

These cookies are quite soft, so don’t be disappointed by the lack of crunch.

SMARTIES Cookies

Ingredients:

1 Cup Butter

1 1/2 Cups Brown Sugar

2 tsp. Vanilla

2 Eggs

2 1/4 Cups Plain Flour

1/2 tsp. Baking Powder

1/4 tsp. Salt

1 1/2 Cups SMARTIES

Method:

Place butter and brown sugar in the bowl of an electric mixer and beat until light and creamy.

Add vanilla and eggs and beat until well combined.

Gradually mix in flour, baking powder and salt.

Place rounded tablespoons of mixture on a lined baking tray, approx.  5 cms apart to allow for spreading.

This mixture is too soft and sticky to flatten with the back of a spoon, so as you place 5 SMARTIES on top of each cookie, use the SMARTIES to slightly flatten and spread the mixture.

Bake at 190C for 8 to 9 minutes, or until the edges of the cookies begin to golden.

Try not to eat them all at once.
