- 2 egg whites
- 1/4 cup sugar
- 1/2 tsp. bicarb soda
- 1/2 cup apple sauce (in jar)
- 2 cups fruit medley (or 2 cups mixed dried fruit)
- 3/4 cup peeled apple, diced
- 1/2 tsp. mixed spice
- 1/2 cup skim milk
- 3/4 cup wholemeal self raising flour
- 3/4 cup self raising flour
- cooking spray
Preheat ovenÂ 180C fan forced.Â
Â In a medium sized mixing bowl beat egg whites and sugar for 1 minute using an electric beater.
Â Stir bicarb soda into apple sauce (it will froth), add to bowl.Â
Add all dried fruits, deced apple, mixed spice and milk.Â
Â Sift both flours and gently fold into mixture in one go, treat as if it is a sponge.Â DO NOT BEAT as this will make the slice tough.Â
Â Coat a slab tin with cooking spray then pour mixture into tin.Â Bake 25 – 30 minutes or until firm to touch.Â Allow to cool in tin then cut into 15 slices.
