Little Cream Cakes


Ingredients:

1 Cup Self-Raising Flour

3/4 Cup Sugar

2 Eggs

3/4 Cup Cream

Directions:

Place all ingredients in the bowl of your electric mixer and mix on low until just combined.

Increase speed to high and mix for a further 2 minutes.

Spoon batter into patty pans or papers and bake at 180C for 15 minutes.

Cool and ice with your favourite frosting.

 

Buttercream Frosting

Ingredients:

2 Cups (230g) Icing Sugar, sifted

1/2 Cup (113g) Unsalted butter, room temperature

1 tsp. Vanilla Extract

2 Tbl. Milk or Light Cream

Assorted Food Colours of your choice (optional)

Method:

In an electric mixer, or with a hand mixer, cream the butter until smooth and well blended.

Add the vanilla extract.

With the mixer on low speed, gradually beat in the sugar.

Scrape down the sides of the bowl.

Add the milk and beat on high speed until frosting is light and fluffy (about 3-4 minutes).

Add a little more milk or sugar, if needed.

Tint the frosting with food colours of your choice.
