Peanut Butter Banana Crush



Diabetic_FriendlyLike the name?  I totally just made it up on the spot, but I like it, so Peanut Butter Banana Crush it is.  Now, before I go any further, I just want to say that this one won’t be going into the lunch box for two reasons. A:  It’s too messy and won’t look like this once the kids have carried it to school, and B:  There are just too many kids at school with Nut allergies, and I don’t want to be that parent who causes an emergency.  Having said that, they’re very yummy, and an excellent after school energy booster (I’m thinking homework here).

There’s no real recipe, just slice your banana into pieces, spread peanut paste/peanut butter over the banana pieces and roll them in crushed nuts.  It’s much easier to spread peanut paste over your banana if you have sliced it first.  That way you can hold it by each end while you spread the peanut paste over it. Trial and error has taught me this!  It was a very messy experience.

Serve it up to the kids and sneak a few pieces for yourself.  Yummy!!
