Chocolate Chip Banana Cookies

It’s been a while since I have had time to search for new recipes and try them out, but with the beginning of school looming on the horizon I need to get my act together.  I have an abundance of frozen bananas in my freezer, so this week is all about the Banana!  I found these diabetic friendly Banana Chocolate Chip Cookies and knew instantly my kids would love them.  They’re soft and cakey, and each biscuit has a few chocolate chips in it, giving the kids the illusion that they are having a treat when we are really getting to exercise portion control.  I think I will need to wrap each biscuit individually in the lunch box to avoid them falling apart, but I think they should travel o.k., and I’ll let you know on my FB page how they freeze.  I only got half the amount of cookies out of this mixture that the original recipe said I should, so that has changed my carb. count per cookie, but apart from that they turned out nicely, were really easy to make, and a real hit with all of my kids.

 

Banana Chocolate Chip Cookies

Diabetic_FriendlyIngredients:

1/3 Cup Butter, softened

1/2 Cup Sugar

1 Egg

1/2 Cup Mashed Ripe Banana (approx. 1 large banana)

1/2 tsp Vanilla Extract

1 Cup Plain Flour

1 tsp Baking Powder

1/4 tsp Salt

1/8 tsp Baking Soda

1 Cup Dark Chocolate Chips (the recipe called for semi-sweet chocolate chips)

Directions:

Preheat your oven to 180C.

In a small bowl, cream butter and sugar until light and fluffy.

Beat in the egg, banana and vanilla.

In another bowl, combine the flour, baking powder, salt and baking soda.

Gradually add the flour mixture to the butter mixture and mix well.

Stir in chocolate chips.

Drop by tablespoonfuls onto a lined or greased baking tray.  I left about 5cms between each biscuit to allow for spreading.

Bake for 9-11 minutes or until the edges are lightly browned.

Remove to wire racks to cool.

Notes:  The original recipe claims you will get 36 cookies out of this mixture, but I only got 36 cookies out of a double batch, making each of my cookies worth 18 grams of carbohydrates, not 9 grams.

The original recipe called for the use of semi-sweet chocolate chips, but I substituted dark chocolate chips.  I did some investigating, and a 15g serve (that’s 1 tablespoon) of semi-sweet chocolate chips contains 10.5g of carbohydrates and a 15g serve of dark chocolate chips contains 9g of carbohydrates which is pretty close, so I have included the carbohydrates for the original recipe.
