Fruit and Seed Slice


If your kids don’t mind seeing seeds and sultanas scattered throughout their snacks then they’ll love this slice.  You could even cut it into muesli bar lengths instead of squares if you wanted to.  And apart from the health benefits, it’s a breeze to throw together and you can add or subtract any dried fruit or nuts you want.  It only took me a couple of minutes to prepare.  I think the longest part was melting the butter, golden syrup and brown sugar together, and while that was happening I put my dry ingredients into a mixing bowl.  I had better stop, or I’ll give you all of the instructions here.  My family loves to grab a piece of this for a breakfast on the go.

Fruit and Seed Slice

Ingredients:

2 1/2 Cups Quick Oats

165g Sunbeam Seed Mix (just Sunflower Seeds and Pepitas, so you can easily make your own)

1/2 Sultanas or Currants

125g Unsalted Butter

1/2 Golden Syrup (you could use Maple Syrup)

1/4 Cup Brown Sugar

Directions:

Combine butter, syrup and brown sugar in saucepan over low heat until the butter melts and the sugar dissolves.

Meanwhile place dry ingredients in a large mixing bowl.

Pour liquid mixture over dry ingredients and stir to thoroughly combine, making sure all of the dry ingredients are moistened.

Press into a lined 16 x 26cm slice pan.

Bake at 180C for 25-30 minutes or until golden and set.

Cool in the pan, I then placed mine in the fridge to make sure it was completely set so it wouldn’t crumble when I sliced it.

Slice into squares or bars.
