Jam Surprise Muffins


Aren’t they cute?!  These little muffins make a nice surprise in the lunch box, giving just a little sweet treat with a dollop of jam in the middle.  Quite often I will eliminate lemon rind from a recipe for the kids, but take my advice and leave it in with this one, it gives it that little something special and isn’t at all over-powering.  They would be lovely for a children’s tea party themed birthday.

Jam Surprise Muffins

Ingredients:

1 3/4 Cups Plain Flour

1/2 Cup Sugar

1 Tbl Baking Powder

1/2 tsp Salt

2/3 Cup Milk

1/3 Cup Butter or Margarine, melted

2 Eggs

1 tsp Grated Lemon Rind

1/2 Cup Jam of your choice

Directions:

Preheat your oven to 180C.

In a large mixing bowl, combine the flour, sugar, baking powder and salt.

In another bowl, lightly beat eggs, milk, butter and lemon rind.

Pour into the dry ingredients and stir until moistened.

Half-fill muffin tins, add a small dollop of jam in the centre of each muffin, and cover with the remaining batter.

Bake in your preheated oven for 20-25 minutes until the tops are golden.
